A sample of what I put in my juice!
Diet is probably the most important thing in your life over which you have complete control. What you put into your body not only affects the way you look and feel, but it also has been scientifically proven to affect your brain's functioning! I don't know about you, but I would always want my brain to be working at its absolute best! Growing up, I was lucky to have a pretty healthy diet, compliments of my mother's Korean-style cooking. But when I got to college, I was exposed to so many unhealthy options at meal times, and I actually put on 15 pounds halfway through my freshman year! :/ Not only was I unhappy with how my body looked, I also felt sluggish after every meal. I experienced many "food comas," which made me want to take a nap after every meal, which then took away time from doing other important things, like studying! So, my poor choice in diet had THREE negative effects on me: weight gain, fatigue, and less time for important things.
Recently, I transformed my diet, for the better! I randomly watched a documentary called "Fat, Sick, and Nearly Dead" on Netflix, and it completely changed my mindset on diet -- it really was the push I needed to stop eating unhealthily. (Thanks Joe Cross!) I now juice every day, and I feel so much better, physically and mentally. I didn't go on a drastic juice fast like the guy in the documentary, but I did cut out all of the unhealthy foods I had been eating. I started out with a juice in the morning - I mixed celery, carrots, cucumber, spinach, kale, apples (for sweetening), lemon, and ginger (for my immune system), which may not sound very appetizing, but it actually tasted pretty good! And then for lunch I would make a bagel, but I would only use half of the bagel, and I added avocado (instead of the usual cream cheese), a few slices of turkey, and lots of lettuce or spinach.
The key to eating healthily is to consume lots and lots of vegetables!!! Vegetables have the micronutrients your body needs to function at its best, and you can get a lot more micronutrients into your body by juicing than if you were to actually eat the whole vegetables. In a way, juicing is sort of cheating! But it's a good kind of cheating (probably the only good kind of cheating out there). It's weird how we all get taught in like elementary school that the bottom of the food pyramid (the food we are supposed to eat the most of) is vegetables and fruits, but how most of us live our daily lives without eating much of them. It's terrible! So, my greatest advice to you all out there who are trying to eat healthier, is to eat as many vegetables as you possibly can! Fruits are important too, but they also contain a lot of sugar, so I would recommend eating more vegetables than fruits. Another great thing about vegetables is that you can't overdose on them! I mean, I guess you can, but you will never become unhealthy from eating a ton of veggies! So next time you go to the grocery store, pick up more veggies! :)
